Since we are a family of three, depending on some occasions, every time we buy a pack of Togue (Mung Bean Sprouts) that usually weighs approximately 500 grams, I divide it into two portions.
And since prices of most commodities are soaring at the moment, we need to save money, at least for now. J
I already cooked the first portion as Ginisang Togue with Tofu, conveniently available for you to check it out if you're interested in knowing how we cooked it.
The second is my wife's favorite request (one out of several), the Vegetable Ukoy.
It is typical to include shrimp in an Ukoy (AKA Okoy) dish.
But we’ll only use Togue as the main ingredient, without the shrimp.
It's a great dish that can be a snack on its own, or viand that can go along with a hot cup of rice (or a special kind of Fried Rice that we also have in store for you).

The Vegetable Ukoy can be a snack on its own. And since we use most common ingredients like egg and Togue, typical for a viand, it is also enjoyable to have it with rice.
First, prepare a clean mixing bowl for all of the ingredients.
You can use a small ladle for scooping the mixture, which will also serve as your measurement for each serving.
