How to Stir-fry Broccoli and Carrots with Beef

First, Prepare the Beef
- In a bowl, sprinkle beef with ¼ teaspoon of salt and ¼ teaspoon ground black pepper.
- Mix the ingredients well, then set aside.

Second, Prepare the Cornstarch Mixture
- Use a small bowl or a cup big enough where you can freely mix two tablespoons of cornstarch, ½ tablespoon soy sauce and ½ cup of water.
If left for several minutes, the cornstarch usually settles beneath the water. But, no worries, stir the mixture once again, and you're good to go. -
Let’s Start Stir-Frying the Aromatics and Beef Strips
- Heat wok.
- Put the two tablespoons of canola oil, coating the cooking area.
- Stir-fry garlic and ginger for 30 seconds to a minute.
- Add beef strips and stir-fry them, frequently tossing for five to six minutes.
- Remove garlic and ginger (we don’t need them anymore), then transfer the beef to a small plate. Do not discard the oil.

Stir-frying Broccoli and Carrots with Beef
- As we continue on the same wok with the same oil, add broccoli and carrots and the remaining salt and pepper—Stir-fry for 3 minutes.
- Put onion, cashew, half of the spring onion and stir-fry for three more minutes.
- Return the beef to the wok. Mix the meat and vegetables and stir-fry for 2 minutes.
- Push the ingredients to the sides, then pour the cornstarch mixture together with the beef broth cube.
- Stir until the broth cube melts and the mixture thickens.
- Now, distribute the meat and vegetables to the thick mixture.
- Stir to coat all the pieces well. Do this continuously for two minutes.
- Put sesame oil, stir some more for about 30 seconds.
- Turn off the stove and sprinkle the rest of the spring onion.
