Filipinos can't deny this truth: Every time there's a big gathering, e.g., birthdays, reunions, fiestas, etc., there will always be Pancit Bihon Guisado on the table, waiting to be munched. Here, we have a recipe that you can serve for a large number of guests!

Since time immemorial, so many traditions from different cultures influence earlier generations of Filipinos.

You might have heard it too, as I did, that one should cook and serve foods related to having long lives during birthdays.

Agree to them or not; still, two of those foods became staples in these celebrations. You know them by the names of Spaghettis and Pancits. Today, we’ll focus on the Bihon variant of the latter.

Recently, my wife and I were assigned to cook for my father-in-law’s birthday. We thought of something special without breaking the budget. We chose to prepare a delicious Pancit Bihon Guisado for feast-like gatherings.

Although I do not have a culinary arts degree, I habit of asking for critical comments from people who’ve tasted the dishes I made. All too often, I felt satisfied with their feedbacks.

So, enough with the intro! Go ahead and try Hearty Tongue’s version of Pancit Bihon Guisado that you can prepare for feasts or banquets.

Note: What we have here is a budget-friendly Pancit Bihon Recipe designed for many servings. You can always change the serving size according to your needs.

Tools that you need

To get the job done, we’ll need these basic tools to make work in the kitchen easier.

  • Knives and separate chopping boards for vegetables and meat
  • A Stove
  • A large wok (Talyasi as we call it) with a lid cover.
  • At least two cooking spatulas or spoons, or a combination of both so you can stir all the ingredients evenly and adequately.

NOTE: I’ve suggested a wok with a lid so we can boil our water faster. But if the wok doesn’t have one, that will not hinder us from proceeding with our instructions.

Let's Start Cooking!

  1. Preparing the Chicken Breast and Gizzards
    • In a saucepan, pour 1.5 Liters of water together with the chicken breast, gizzards, and 1 tsp of salt. Cover the lid and turn on the stove.
    • When the water begins to boil, lower down the stove's flame. Simmer our two poultry products for 30min.
    • As soon as the 30 min is up, turn off the stove. Remove the chicken and gizzards from the pot and keep the stock for later use.
    • Shred the flesh of the chicken.
    • As for the gizzards, slice them into pieces.
    • Now, they are ready for sauteing.

    To save more time, it's good to work with the other ingredients (chopping, slicing vegetables, etc.) while waiting for the chicken and gizzards to be cooked. That way you'll save more time working in the kitchen.
  2. Start Sautéing with the Aromatics and Chicken Liver
    • With your large wok already heated, pour in the canola oil.
    • Saute garlic to a golden brown, then put the onions.
    • Stir until the onions become translucent.
    • Next up is the chicken liver. Stir for about one to two minutes.
  3. Cooking all Ingredients
    • By now, the liver has changed its color. Put the shredded chicken, squid balls, and chicken gizzards. Please give them a good stir again.
    • Let’s then put the chicken broth cube and continuously stir the ingredients until the broth cube dissolves.
    • Remember the chicken stock you set aside a while ago? Pour it into our wok together with the 2 liters more of water.
    • Pour in also the soy sauce, then cover the wok. (Turn the stove's flame to high to bring all ingredients to boil faster.)
    • When water starts boiling, turn the stove's flame to a medium, then put in the celery. (You can set the celery together with the other vegetables, but I prefer this way)
    • After a minute, bring in the Baguio beans and immediately put the Bihon noodles straight in the wok.
    • Continuously stir to distribute all the ingredients evenly. (Aside from having strong arms, it will also require two strong spatulas to mix all ingredients) :-)
    • When the liquid soaks all the Bihon noodles, put the rest of the vegetables and the ground pepper. Please give them the perfect mixing to distribute all the ingredients evenly.
    • Mix until you can't see any more liquid underneath.
    • Great! Your Pancit Bihon Guisado is now ready to serve!
