Although preparing Filipino macaroni soup is relatively easy, the Chicken Sopas recipe will still become arduous for someone new to home cooking. But, don't worry, we'll teach you how to cook it.

Typical to most Filipino families, the tender loving parent will always cook soup for the patient when one member gets sick. It will either be the essential Lugaw or the equally familiar Chicken Sopas.

Other than having the dish while in bed while ill, it is best to have it on breakfasts and cold seasons.

But depending on each person’s opinion (and cravings), as long as you know how to cook one, you can always enjoy the dish at any given time.

Now, about the etymology of Sopas, it may vary depending on who you will ask.

But upon investigation, Sopas comes from the Spanish word Sopa, which means soup in English.

On the other hand, the Filipino Sopas, as some of you might have already known, can have ingredients other than the Chicken.

On rare occasions, we can use pork or other types of fowls, and even pigeons. Yeah! Unusual as it sounds, in some Philippines’ regions, people eat pigeons as a source of protein.

Another fast way to cook the Sopas, from my experience, is preparing it with corned beef (no brand in particular).

But the essential ingredients that are always present in the Filipino dish are the aromatics garlic and onion, elbow macaroni, salt, pepper, the broth of whatever meat we’re about to use, and water.

We can also add vegetables like cabbages, carrots, and celery, although they are optional.

And last but not least, don’t forget the evaporated milk. It will not become the Sopas we know so dearly without it. Also, it will give the Chicken Sopas its unique taste, adding more to make it creamy according to your buds.

How to Cook the Chicken Sopas Recipe

  1. Initial Prep for Chicken and Make Stock in the Process

    (These instructions are for seven servings.)

    • In a saucepan, pour 1.5 Liters of water with the chicken breast and 1 tsp of salt. Cover the lid and turn on the stove.
    • When the water begins to boil, lower down the stove's flame. Simmer the poultry product for 30min.
    • As soon as the 30 min is up, turn off the stove. Remove the chicken from the pot and keep the stock for later use.
    • Shred the meat of the chicken.
    • Now, we are ready to saute.
  2. How to Cook Chicken Sopas That Filipinos Love

    (These instructions are for seven servings.)

    • Get another larger saucepan that can hold at least 3 liters of water. Heat it with a tablespoon of oil or butter.
    • Saute the aromatics: garlic to a golden brown followed by onion until it becomes somewhat translucent.
    • Put the shredded chicken, then the broth cube. Mix until the broth cube melts.
    • Bring in the elbow macaroni with the fish sauce and sliced hot dogs. Remix the ingredients.
    • Pour in the chicken stock, then add the remaining water. Turn up the heat, cover the saucepan and bring it to boil.
    • Boiling usually starts around 5 minutes after that; you can lower down the heat and simmer for 25 minutes or until the elbow macaroni expands or is cooked.
    • Pour in the evaporated milk together with ground black pepper and the remaining salt from our ingredients. Simmer for 3 minutes.
    • Finally, add the veggies, then simmer for another 2 to 3 minutes.
    • The Chicken Sopas is now ready.
