Previously, I shared with our readers that I bought a considerably large-sized unripe Papaya from a rolling store.
I did not cook the whole thing in one dish since I found it too big for three people, so I divided the Papaya.

And now, here is the second half, presenting the Atchara, Pickled Papaya recipe.
How to Make a Hearty Homemade Atchara
Start by acquiring the ingredients to make the side dish.
The components of an Atchara recipe are relatively simple. Just begin with the main ingredient, which is the unripe Papaya.
Then buy carrots, bell peppers, ginger, and raisins. The rest, I'm sure, you already have in your kitchen, i.e., vinegar, sugar, salt, water.
While others will instruct to slice the ginger thinly into strips and add garlic in the mix, some people dislike them both in Atcharas, including my wife.
We'll exclude the garlic in this recipe and merely slice the ginger thinly.
Also, prepare clean (preferably glass) jars or containers with resealable caps to keep the finished product.
