Previously, I shared with our readers that I bought a considerably large-sized unripe Papaya from a rolling store.
I did not cook the whole thing in one dish since I found it too big for three people, so I divided the Papaya.
Having two pieces of equally divided Papaya, I cooked the first in the Spicy Ginataang Papaya recipe.
And now, here is the second half, presenting the Atchara, Pickled Papaya recipe.
How to Make a Hearty Homemade Atchara
Start by acquiring the ingredients to make the side dish.
The components of an Atchara recipe are relatively simple. Just begin with the main ingredient, which is the unripe Papaya.
Then buy carrots, bell peppers, ginger, and raisins. The rest, I’m sure, you already have in your kitchen, i.e., vinegar, sugar, salt, water.
While others will instruct to slice the ginger thinly into strips and add garlic in the mix, some people dislike them both in Atcharas, including my wife.
We’ll exclude the garlic in this recipe and merely slice the ginger thinly.
Also, prepare clean (preferably glass) jars or containers with resealable caps to keep the finished product.

- Colander

- Knife ( be very careful when using sharp knives)

How to Make Atchara, Pickled Papaya

Prepare the Papaya and other Ingredients for Atchara Recipe
- After shredding and placing the Papaya in a mixing bowl, toss and turn it with two tablespoons of salt. Make sure you've distributed the salt all over the shredded Papaya. Set aside for 1 to 1 and ½ hours.
- Using a colander, rinse the Papaya in running tap water.
- Drain the Papaya even further with the help of a muslin cloth. If you do not have this type of cloth yet, use a clean handkerchief instead, it will still get the job done. The hanky should be strong enough when you squeeze the Papaya in it, though.
- Combine Papaya, shredded carrots, bell pepper, ginger and raisins in the mixing bowl.
- Place these ingredients in clean jars or containers with resealable caps that can be tightly sealed. Later, we'll add the syrup to each of these jars.

Prepare the Syrup for our Atchara
- Initially, combine water, sugar and salt in a saucepan.
- Dissolve the sugar and salt by continuously stirring these ingredients with the water.
- Now, add the vinegar. Turn on the stove and bring the liquid to boil. Simmer for 5 minutes. DO NOT STIR when doing this process.
- Let the syrup cool down first before pouring it into the Atchara jars or containers.
- After pouring the syrup equally into every jar or container with the Papaya and the rest of the ingredients, close the lids tightly and refrigerate, preferably for two days before consuming.
